There's a cafe down the street from where I work that serves the best chicken salad croissant sandwiches. Croissants are my weakness. I can never get enough of that flaky butter deliciousness! Whenever I feel like having something a little different than my usual salad for lunch, I'll head up to the cafe for their amazing chicken salad sandwich. One of my favorite parts of chicken salad is having all the extras in there - the crunch I get from the celery, apples and sliced almonds is the best. This chicken salad is also made with a lightened up dressing, which is so good! It's a mix of mayo and greek yogurt with a splash of lemon juice and some spices.

I recommend not buying one off season but that's another story. lol We put it on the deck a few weeks ago and have made some really great recipes so far! It's my first time experimenting with the grill, but so far the recipes have come out great! After being at work all day, it's nice to come home and grill for dinner. Lance and I have been having so much fun doing our Sunday night cooking series! We've had some pretty amazing dinners, and I really want to share what I thought of each recipe with you guys. If your not familiar, Lance and I pick out a recipe to make on Sunday nights, either one we've made before or one that's new to us. We video the process of us prepping dinner, and then I post it on social media. We do this as a way to get more of the recipes we love out to everyone. Lance and I cook a lot, and I wish I could post every recipe on the blog, so the videos are another fun way to show more of the recipes we make.
Swedish Meatballs are something I've never made before, but I've had them as appetizers at get togethers . So when I hosted book club last weekend, I decided to make them. I have a few of The Pioneer Woman's cookbooks and saw this Swedish Meatball recipe. She uses homemade meatballs, and before I would have wanted to as well, but the meatballs I got from the freezer section in the store were just as good! If you have frozen homemade meatballs at home you can use those instead! We had them at book club as an appetizer, and then the next day I boiled some egg noodles and topped with leftover Swedish Meatballs and some fresh parsley. This recipe took around 20 minutes to make. It's perfect for a weeknight meal or a quick appetizer to make.
Last week my sister, Chira, posted a picture of S'mores Cupcakes on her Facebook page. It was my nephew, Evan's, 10th birthday, and Chira made them to bring to Evan's classroom to celebrate. S'mores are one of my favorite desserts. I love the combo of graham crackers, melted chocolate and gooey marshmallow. They are such a staple dessert in the summer. These cupcakes are a nice alternative when you can't toast the marshmallow outside over a fire. For these cupcakes, you have a chocolate cupcake topped with fluffy marshmallow frosting and a sprinkle of graham cracker crumbs.
On my Pinterest I have a board called "Tried and True". It includes the recipes I've tried on Pinterest that are definitely worth making again. Once in a while, I'll make a recipe from Pinterest that didn't turn out well. The image looked great, but the recipe wasn't. I'm really particular when it comes to saving recipes to my tried and true Pinterest board. It literally had to be mouth watering for me to save it. Since I've tried SO many recipes on Pinterest, I'm sharing below some of my tried and true favorites for you to enjoy as well!
Bananas are a staple on our weekly grocery list. Lance and I can't get enough of them, but some weeks we have a few that go brown, and we'll toss them in the freezer to save for when we make our favorite Chocolate Chip Banana Bread. We've made this banana bread recipe a lot! It's SO good with the chocolate chips, and I'm a huge fan of walnuts - so I always add them in when I have them, but we've made the banana bread without walnuts as well. The best part is the bites of thinly sliced bananas you get throughout the bread. There's something about banana and chocolate together that I absolutely love.
