I used to buy this Black Bean and Corn Salsa at the grocery store in a little container, and I loved it so much that I began making it at home. With making it at home I get so much more salsa than what I would get buying that little container at the grocery store. This salsa is packed with fresh and healthy ingredients which I love! Lance and I mostly eat this salsa with chips, but we also had it as a side to these Chipotle Black Bean, Brown Rice and Mango Quesadillas we made last week. One of mine and Lance’s favorite snacks to have after work is chips and salsa, and I love how this one makes enough to last us most of the week. The longer it sits, the better it tastes!

How To Make Black Bean and Corn Salsa:
This Black Bean and Corn Salsa is so simple to make. You just need to combine everything in a bowl and stir. It couldn’t be easier! I prefer making this salsa at home instead of buying it already pre-made because I know exactly what ingredients I’m putting in it. Also, you can alter the recipe to what you like. Omit cilantro or cumin if you prefer, or add more jalapeno or lime juice for example. I tend to add just 1 cup of tomatoes instead of 2 cups because Lance isn’t a big fan of tomatoes. You really can’t go wrong! This salsa would be great to make with all of your garden veggies too!
Black Bean and Corn Salsa
Yield: 6 Cups
1 (15-ounce) can yellow whole kernel corn, drained
1 (15-ounce) can black beans, drained and rinsed
1 cup chopped red onion
2 cups seeded and chopped Roma tomatoes
1/3 cup seeded and chopped jalapenos
1/4 cup fresh chopped cilantro
1/4 cup lime juice
2 tablespoons olive oil
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
Combine all ingredients except tortilla chips in a bowl and stir. Serve with tortilla chips or as a side dish.
