Lance and I love a good fruit salsa, and one of our favorite snacks we have during the day is chips and salsa. At the grocery store we need to buy 2 bags of chips and 2 bottles of salsa because 1 is never enough to last us all week! lol We are obsessed with Newman’s Own Peach Salsa. Something about the sweet and spicy is so addicting!

This weekend I wanted to make my own fruit salsa to go on our blackened shrimp tacos Lance and I were having for dinner. The Fresh Pineapple Salsa brought our tacos to a whole new level. I love the freshness of this pineapple salsa, and I can see this recipe being made weekly in our house! The good thing is I can just change up the fruit for a different flavor. Next time I may add peach or even mango instead of pineapple.

This salsa is great served in shrimp tacos, but I also think it would be delicious on top of fish and as a dip for your favorite chips. This Fresh Pineapple Salsa is a game changer to your everyday salsa recipe, I love the addition of fruit for summer, too! 

Ingredients:

  • Pineapple
  • Red Bell Pepper
  • Red Onion
  • Cilantro
  • Jalapeno
  • Limes
  • Olive Oil
  • Salt

How To Make Fresh Pineapple Salsa:

This is the easiest salsa recipe to make! Chop up the pineapple, red onion, red bell pepper, cilantro and jalapeno and place into a bowl. Add in olive oil, a pinch of salt and some fresh squeezed lime juice. Stir ingredients until combined. The longer it sits, the more time the flavors have to blend together to create the most delicious salsa! The next day while snacking on chips and this Fresh Pineapple Salsa, I noticed the flavors intensified as it sat in the fridge overnight.

Ingredients:

1/2 pineapple, cored and diced

1/2 red bell pepper, finely chopped

1/2 red onion, seeded and finely chopped

1 jalapeno, seeded and finely chopped

1/2 cup cilantro leaves, chopped

2 tablespoons fresh lime juice

2 tablespoons olive oil

Pinch of salt

Instructions:

Place the chopped pineapple, red onion, red bell pepper, jalapeno and cilantro into a large bowl. Add in the olive oil, pinch of salt and freshly squeezed lime juice. Mix ingredients until combined. 

Cover and refrigerate until ready to serve.
