Favorite Granola

Granola is one of my favorite snacks. I usually have plain greek yogurt just about everyday, so I like to add a couple of toppings to my yogurt to mix it up.

The toppings vary a bit depending on what fruit I have or if I want a drizzle of honey or maple, but this granola always stays. 

Granola is so versatile, you can really make this your own. For some fun you can add toasted coconut or dried cranberries to the baked granola. Adding a little vanilla extract or some cinnamon in the mixture would be really good too. You can also change up the nuts in the recipe – I may try almonds instead of pecans next time. 

This recipe is so easy to make. There’s only a few ingredients and they are mostly pantry staples. All of the ingredients are combined in one bowl and it bakes in just 15 minutes.

You can control what you put in homemade granola and make it healthy with quality ingredients. Also, you can put in what you love. My favorite ingredient are the pecans because it gives the granola a nice texture and added flavor. 

After the granola cooled I made myself a snack. This time I topped my plain greek yogurt with fresh blueberries, a drizzle of honey and of course my favorite granola.

Ingredients

1 1/2 cups rolled oats (AKA old-fashioned oats)
1/2 cup pecans, coarsely chopped
1/2 cup hulled raw sunflower seeds
2 tablespoons honey
1 tablespoon extra-virgin olive oil
2 tablespoons maple syrup
Kosher salt
 
Instructions
 
Preheat oven to 350 degrees F. Spray sheet pan with non-stick cooking spray. (I also like to spray my TBSP with cooking spray so the honey won’t stick to the measuring spoon.) Combine oats, pecans, sunflower seeds, honey, olive oil, maple syrup and a pinch of salt in a large bowl. 
 
Spread mixture onto sheet pan and flatten out. Bake until golden and crisp, about 15-18 minutes. (You’ll be able to smell when the granola is done too – it will smell amazing!) Cool completely. Then take a spatula to break up the granola and store. (Mason jars make great containers to store your homemade granola.)
