Chicken Salad Croissant Sandwich

Delicious chicken salad with crunchy apples, celery and sliced almonds mixed with a lightened up dressing piled high on a flaky buttery croissant.

There’s a cafe down the street from where I work that serves the best chicken salad croissant sandwiches. Croissants are my weakness. I can never get enough of that flaky butter deliciousness! Whenever I feel like having something a little different than my usual salad for lunch, I’ll head up to the cafe for their amazing chicken salad sandwich. One of my favorite parts of chicken salad is having all the extras in there – the crunch I get from the celery, apples and sliced almonds is the best. This chicken salad is also made with a lightened up dressing, which is so good! It’s a mix of mayo and greek yogurt with a splash of lemon juice and some spices.

How To Make A Chicken Salad Croissant Sandwich:

It couldn’t be easier to whip up these Chicken Salad Croissant Sandwiches. All you need to do is combine the chicken, celery, apples and sliced almonds in a bowl. In a separate bowl you whisk together the dressing ingredients, and then pour the dressing into the chicken mixture and combine. Cut croissants in half and lay lettuce on the bottom half of the croissant. Pile the chicken salad filling high and then place the other half of the croissant on top.

Chicken Salad Croissant Sandwich

Yield: 6 Sandwiches


3 cups shredded chicken
2 stalks celery, chopped
1 cup apples, chopped
1/2 cup sliced almonds
6 croissants

For The Dressing:

1/2 cup mayo
1/4 cup plain greek yogurt
1 tbsp lemon juice
1 tsp garlic salt
1/2 tsp salt
1/4 tsp black pepper 


In a large bowl combine chicken, celery, apples, and sliced almonds. In a separate bowl, whisk together all dressing ingredients until combined. Pour the dressing into the bowl with the chicken and stir. Slice croissants in half and place lettuce on bottom half of the croissants. Pile chicken salad on each sandwich and place other half of the croissant on top. Enjoy!
