What does everyone have planned this weekend? Any special recipes you’re grilling? I actually surprised Lance with a grill for Christmas. I recommend not buying one off season but that’s another story. lol We put it on the deck a few weeks ago and have made some really great recipes so far! It’s my first time experimenting with the grill, but so far the recipes have come out great! After being at work all day, it’s nice to come home and grill for dinner. Who doesn’t love a good chocolate chip cookie?! I’ve never had one I didn’t like, but everyone has their favorite recipe, right? Mine is this one. A perfectly golden, crispy edge with a gooey, soft middle that just melts in your mouth. The trick I’ve learned is letting the dough rest overnight in the fridge. It really makes all the difference in the world. It’s a little hard to wait that long especially if you’re like me and want chocolate chip cookies right away, but it’s totally worth it. I promise! The ingredients have a chance to blend together making the cookies more flavorful. Also I used mini chocolate chips, instead of the regular size. I think using mini chips gives you that chocolatey bite in every mouthful (which I love!). I’ve made a lot of chocolate chip cookie recipes each always a little different, but after making this one I finally found a recipe that’s here to stay!
Lance and I have been having so much fun doing our Sunday night cooking series! We’ve had some pretty amazing dinners, and I really want to share what I thought of each recipe with you guys. If your not familiar, Lance and I pick out a recipe to make on Sunday nights, either one we’ve made before or one that’s new to us. We video the process of us prepping dinner, and then I post it on social media. We do this as a way to get more of the recipes we love out to everyone. Lance and I cook a lot, and I wish I could post every recipe on the blog, so the videos are another fun way to show more of the recipes we make.
Swedish Meatballs are something I’ve never made before, but I’ve had them as appetizers at get togethers . So when I hosted book club last weekend, I decided to make them. I have a few of The Pioneer Woman’s cookbooks and saw this Swedish Meatball recipe. She uses homemade meatballs, and before I would have wanted to as well, but the meatballs I got from the freezer section in the store were just as good! If you have frozen homemade meatballs at home you can use those instead! We had them at book club as an appetizer, and then the next day I boiled some egg noodles and topped with leftover Swedish Meatballs and some fresh parsley. This recipe took around 20 minutes to make. It’s perfect for a weeknight meal or a quick appetizer to make.
