This Blueberry Pineapple Mint Smoothie is the best! I like my smoothies to be thick, creamy and flavorful. I started getting on a smoothie kick since I joined Beach Body, and now I have one every morning to start my day. There are so many variations of smoothies, but I just keep coming back to this one. With or without the mint this smoothie is equally as delicious. I was experimenting one morning since I had the mint on hand, and it adds a refreshing taste I love.
To make this Blueberry Pineapple Mint Smoothie, first cut up and measure out the fruit. I like to put 1 cup of fruit in my smoothie, so for this recipe I use 1/2 cup of blueberries and 1/2 cup chopped pineapple.
I always have greek yogurt on hand, and I love adding it to smoothies because it’s high in protein. If I don’t add protein powder in my smoothie, I’ll add greek yogurt. I also love how adding the greek yogurt gives the smoothie a nice tangy flavor and makes it really creamy. I I use about 1/2 cup of non-fat plain greek yogurt for this recipe.
After adding the fruit and non-fat greek yogurt, I add in 1/2 cup of spinach, 1/2 cup of 1% organic milk, about 4-5 ice cubes and a couple of mint leaves. I always add spinach to get my veggies in, since I have a hard time finding ways to incorporate them in my meals except for salads.
This smoothie is so refreshing and creamy. I love how quick it is to make. You can even portion out the fruit at the beginning of the week to make it that much easier. Before I didn’t make healthy choices for breakfast, but I love knowing that now I get some veggie, fruit and protein servings to start my day!
Yield: 1 Serving
Ingredients
1 cup fruit (1/2 cup blueberries and 1/2 cup chopped pineapple)
1/2 cup non-fat plain greek yogurt
1/2 cup spinach
1/2 cup 1% low fat organic milk (or milk of choice)
4-5 ice cups
4-5 mint leaves (more or less depending on taste)
Instructions
Add all ingredients to a blender and blend until smooth. Drink immediately.
Notes
- Add more milk for a thinner consistency.
- If fruit is frozen omit the ice.
- You can omit the mint if you would like. The smoothie is delicious both ways.
